i had a giant baked sweet potato! i rubbed salt, cumin, and chipotle chili powder all over the outside, and smeared avocado all over the inside, and squeezed lime over it :) NOMMMM CITY USA

last night we had a grilled cheese cook off.... fucking MINDBLOWN y'all. now I'm pretty sure none of us is going to be able to shit for a week but it was soo worth it!!

Dinner yesterday, by me: Roasted sweet potatoes and courgette, some kind of veggie-filet, a greek-yogurt-herbs-sauce, and a little baby greens salad.

Dinner today, by boyfriend: rice, and courgette, capsicum, topinambur, carrots, onion, garlic and tofu in a coconut-milk-peanut-butter sauce.

both were really awesome.

We planned to have some friends over for a "cooking night" tonight but neglected to buy ingredients. Everything is closed today for the public holiday. Soooo I'm probably having some sub-par homemade bread and a shitload of cupcakes for dinner.

Red beans and rice with grilled chicken and yellow bell pepper thrown in, and cheese quesadillas to eat the rice mixture with! SO YUMMY!

And breakfast at midnight!

Holy shit my dinner tonight is delicious. And I wasn't sure how it would turn out...

This education group was at the lab when I arrived today, and they gave me a ton of left over food that they didn't want to carry back (i.e. an onion that was half used, etc.).

So I created this Greek "pizza" for dinner--IT IS AMAZING!!!

Spinach tortilla
Mushrooms
Onion
Olives (I used Kalamata)
Turkey (could omit, it was one of the leftovers)
Mozzarella, shredded
Balsamic Italian dressing
Green onions
Feta, crumbled

Cook mushrooms and onions in olive oil until most of the way cooked, add turkey, olives, and a few splashes of the dressing and cook for an additional 2 minutes. Heat griddle pan (or oven or skillet) and spray with nonstick spray. Throw tortilla in pan, and cover with mozzarella. Add mushroom mix on top, sprinkle with feta and green onions. Cook over low for a few minutes, until cheese starts to melt (I used a foil tent to help). Once melted, crank the pan to medium or medium-high to crisp up the tortilla. Serve with drink of choice!

It would be awesome with some bell peppers and roasted garlic, too (if you have it on hand).
