Homemade bagels!!!!

Postby XZombieXPirateX on Mon Feb 08, 2010 6:47 pm

I've been baking these badboys like once or twice a week for the past month! So easy to do and ends up being way cheaper than going to the bakery and buying them fresh or getting a bag of the Dempsters or whatever ones that aren't very good. I have a Kitchenaid mixer but you can do this in a bowl and use your hands too, its just a bit more work.

Here's what you need:

-4 cups flour
-1 Tablespoon sugar
-1 tablespoon salt
-1 Tablespoon vegetable oil
-2 teaspoons instant yeast( or 1 packet)
-1-1/2 cups warm water

-Put all your dry ingredients into your mixer and start it going on low with the dough hook, pour in the warm water and oil. Mix until everything is combined. If it seems too thick or you still have flour that's not getting mixed in then just drizzle in a bit more warm water. It's better being a bit too wet than too dry!

-Take you dough ball and cut it into 8 pieces, throw the pieces back into the bowl and let them sit for maybe 15 minutes, no longer than that or they will turn out too tough!

-Start your oven at 425

-Take each of your dough pieces and roll them into a rope, loop each rope over so that the ends overlap and pinch them together. Lay them out on a cookie sheet lined with parchment paper and let them sit for another 15 minutes

-Get a pot of water boiling while you wait!

-Drop your bagels in a couple at a time and boil them for about 30 seconds each side, they should float and get nice and plump, scoop em out with a slotted spoon and put them back on the cookie sheet

-Now you can put on some sesame or poppy seeds if you like, I like just rubbing a bit of butter on the surface

-Pop them in the oven for about 20 minutes or a bit longer, they should have just a bit of color, don't let them brown or they will be hard when they cool, I like to check on them about halfway through and turn the pan as well

-Let them cool as long as you can stand before you NEED to eat one!

p.s.-I have pictures somewhere but I don't know where! I'll post some as soon as I find them!

Oh, that is great!
It's not so easy here to get bagels at all.
Do you think it would work with whole grain flour as well?

I think it would work if you added stuff. Last night I made another batch of the plain ones and while I waiting for those I decided to make another batch but added:

-2 1/2tablespoons of brown sugar
-1 tablespoon cinnamon

They were awesome!

I think whole wheat flour would work as well, I'm thinking about making a batch with ground flax seed.
